Simple Green Curry Recipe

The best thing about Green Curry is the curry sauce. The real authentic Thai green curry is very minimalistic and doesn't have much like western styled ones. It's minimal so people can taste how good the curry is without being distracted by too many vegetables and meat. Also, the best way to make the curry is either with the whole chicken thighs in them or with beef strips.

Ingredients

  • Jasmine rice, crispy Roti or Thai rice noodles (kanom jeen)
  • 3 - 4 chicken thighs (cut or uncut, depends on preference)
  • 2 tbsp oil
  • 2 - 3 tbsp Thai green curry paste
  • 400ml coconut milk, tinned
  • 3 kaffir leaves (or lime leaves)
  • 2 - 4 tbsp fish sauce
  • 2 - 3 tbsp sugar
  • Optional: Fresh red chillies to garnish

1. Cut chicken thighs in half (if prefers smaller chicken bites)

Method

1. Heat the oil in a small to medium-sized pot or wok over medium heat.

2. Add the curry paste in and stir until you can smell the nice fragrance of the paste.

3. Add coconut milk, kaffir leaves, fish sauce and sugar to your liking.

4. Meanwhile, boil the needed portion of rice or noodles. Or prepare the Roti.

5. Lower the heat to medium low, then add the chicken thighs. Leave it to cook for 10 - 15 minutes or when the chicken is cooked.

6. Remove from heat. Serve it in a separate bowl with rice, garnish with red chillies (optional) and enjoy the meal!


Tips

  • Add chicken after mixing different spices in the curry to avoid overcooking the chicken.
  • Recommended meat: chicken thighs and beef strips only (those are the ways Thai people light to eat!).


  • Vegetarian option:
    • Remove meat from recipe.
    • Replace fish sauce with soy sauce.
  • Vegan option:
    • Remove meat from recipe.
